10 Weeks Left!

Well technically I don't have 10 weeks left until tomorrow, but it's pretty much the same. With only 10 weeks left I am now starting to gather all the stuff I need for her arrival. I am just about done, but I still need to get a stroller and car seat.

 Baby Name!
Cody and I have finally agreed on a baby name. The name we picked was actually one that Cody liked the best from the very beginning. Her name is going to be Emma Janae Squires :)

Appointments/ultrasounds
So for the past few months we have had an ultrasound every appointment to check up on little Emma's kidneys. Her kidneys have a little more fluid in them than the normal baby. The doctors want to make sure that it doesn't get any worse. We have been told that she will most likely be fine, but it is always good to check :)

21 weeks

Just had my 21 weeks  ultrasound check up. They measured her and made sure that everything was going as it should. So far she weighs 14 oz and is just getting bigger and bigger :)

Breads

Yogurt Biscuits
Ingredients:
·         1 1/2 cups self-rising flour (plus more for flouring surface)
·         1 teaspoon salt
·         1 1/4 cups plain Greek yogurt
Instructions:
  1. Preheat oven to 450F.
  2. Whisk flour and salt together in a large bowl. Make a hollow in the center. Pour yogurt into center, and stir with a fork or spoon pulling flour into yogurt. Mix until dry ingredients are moistened and the dough forms.
  3. Sprinkle a clean surface with flour. Turn dough out, sprinkle with flour and fold in half. Pat dough until 1/2-inch thick. Flour again if necessary and fold dough in half a second time. Pat dough into a 1/2-inch thick round.
  4. Dip a 2-inch biscuit cutter into flour and cut out biscuits without twisting. 5. Place biscuits close together on a baking sheet.  Bake 10 to 14 minutes, until light golden brown.  Serve hot.

These are very easy and a little healthier than the normal recipe. I have made them twice so far and I have found out that when I added the salt that it was way too salty, so my second time around I didn’t add salt and the biscuits turned out a lot better. They aren’t as good as Mom’s biscuits, but they are easy to make and healthy! Enjoy!
